Ice Cream Sandwiches with Pistachio


16 Each              Soft Sugar Cookies

1/2 Gallon           Vanilla Ice Cream-softened

2 Cup                  Pistachios-crushed

 

To Assemble the Sandwiches:

Scoop a generous portion of ice cream onto one cookie and top with another cookie and smash to form sandwich. The sandwich should be about 2 inches thick. Roll the exposed ice cream in the pistachios to coat ice cream.

Serve immediately or store in freezer wrapped individually in plastic wrap or wax paper.
