Cheer-wine Barbeque Sauce

 

 Makes about 3 Cups

2 Tablespoons               Olive Oil

2 Each                            Fresh Garlic-fine dice

1/4 Cup                          Yellow Onion-fine dice

36 Ounces                     Cheer-wine Soft Drink

3 tablespoons                Tomato Paste

½ Cup                              Ketchup

1-32 Ounce Can            Tomato Sauce

¼ Cup                              Balsamic Vinegar

2 Tablespoons              Honey

2 Teaspoons                  Smoked paprika

1/2 Teaspoon                 Kosher Salt

1 Tablespoon                 Black Pepper

1-4 Teaspoons               Sriracha Hot Sauce

Warm oil in a stock pot over medium heat, add the garlic, onion and cook to soften, about 2 to 3 minutes. Turn heat up to medium high heat; add 2 cups of the Cheer-Wine. Stirring frequently, cook until reduced by about half.

Add the tomato paste, stir to loosen and then add the tomato sauce, ketchup, balsamic vinegar, smoked paprika, salt and pepper.

Lower heat to medium, cook until thick and remove from heat. Stir in remaining Cheer-Wine and Sriracha hot sauce to taste. Continue to cook until thick.

Use immediately or store in a covered container for up to 2 weeks.
