CHARLOTTE, N.C. - Chef Carrie Hegnauer stops by the Fox News Rising kitchen with some fun recipes that would be perfect for your New Year's Eve celebrations! 

 

Recipes: 

Collard Greens for New Years
A Southern tradition  
makes 4- 6 servings
Ingredients
- 2 bunches collard greens, dark green, not yellow
- 1 smoked turkey wing or leg
-  ½ tsp. Red pepper flakes
 

Method of Preparation
- Strip tough middle stem out of large collard leaves, discard, small leaves are tender enough
- Stack and roll big leaves together and cut into 1 inch strips
- Add to a big pot of COLD water and bring to a boil, drain collards
- Bring same pot back up to a boil with cold water and then add collards back in (this helps get rid of the bitterness associated with collards)
- Now you add a smoked turkey wing or leg, pepper flakes and cover
- Simmer for 1 hour
- Carefully remove wing or leg and de-bone then put meat back into pot
- Simmer for another hour
- Serve with the juice from the pot called “pot liquor” (pronounced Potlickah)!

 

Jack Frost – wintery twist on a summery Southern Mint Julep
1 cup of snowflakes (or crushed ice)
½ oz crème de menthe (white or green)
1 oz Jack Daniels Whiskey (or favorite bourbon)
3 oz ginger ale
½ drop vanilla
1 tiny green and red scarf tied around the glass – drink before he melts!
