Warm German Style Sweet Potato Salad

WARM GERMAN STYLE SWEET POTATO SALAD

Yield:  8 Portions

Oven @ 350 degrees

Ingredients
       2 each   Sweet potatoes (Peeled and cut into desired shape)
    1/2 each   White (or red) onion, thinly sliced
       1 each   Green pepper
       1 each   Red pepper
       2 Tbsp   Stone Ground Mustard
       2 Tbsp   Chives, (thin sliced)
       1/4 cup  Cider Vinegar
1/2-3/4 cup  Olive Oil
     To Taste  Salt & Pepper

Method:  Prepare all the vegetables.  Toss the sweet potatoes in a little of the olive oil and oven roast until cooked (about 15 minutes).  Toss the peppers and onion in a little olive oil as well and oven wilt them.  While still warm, toss the peppers, onion, sweet potatoes and mustard together, add cider vinegar.  Season to taste and finish with the chives.
