The Perfect Valentine’s Day Dinner For Two

Former Panthers offensive lineman and master EDGE Chef Geoff Schwartz cooked up a Valentine’s Day dinner for two.

Recipe:

1 Snapper Filet

8oz crab claw

2/3 cup white win

1 cup heavy cream

1tbsp butter

1 lemon

1 shallot

2 cloves of garlic

1 egg

flour

bread crumbs

salt and pepper

Heat the oven to 375. In a non stick skillet, heat some olive oil, enough to coat the entire pan. Dip the snapper into the flour, then egg, then onto the breadcrumbs to coat evenly. When the oil is hot, put the snapper filet skin side down, and cook until the filet is golden brown. Move to baking sheet, and add into the hot oven for 10 minutes.

Clean the skillet, or use a new one. Heat to medium.  Add some olive oil. Fine chop the shallots and garlic, add to the oil. Cook for 2-3 mins. Add the wine to deglaze the pan, and add the crab meat. Give it a quick stir, then add the heavy cream. Cook on medium for 2-3 minutes, then add the butter and lemon juice, move to simmer. When the snapper is finished in the oven, move to a plate. Pour the crab mixture over the snapper and serve. If you want the crab mixture to be thicker, start at the same time as the snapper in a separate pan, and simmer for multiple minutes.
