
Lime Oregano Chicken with Sausage Orzo “¢
2 Each Chicken Breast “¢
To Brush-Olive Oil “¢
To Taste-Kosher Salt/Black Pepper/Dry Oregano “¢
1 Cup-Orzo Pasta “¢
1/4 Cup-Onion-small dice “¢
one space¼ Pound-Breakfast Sausage “¢
3 Cups-Chicken Stock/Broth “¢
1 Each-Lime-halved “¢
2 Tablespoons-Unsalted Butter Directions 1.
Warm a large sauté pan over medium high heat. 2.
Add sausage, browning while breaking up into small pieces, 1-2 minutes 3.
Add orzo, stirring to toast light brown, 2-3 minutes. 4.
Add 2 cups chicken stock, season with salt/pepper, stir to incorporate, and bring to a boil. 5.
Reduce heat to a low simmer, cover and cook until orzo is tender, 15-18 minutes. 6.
While orzo is cooking, preheat a non-stick pan over medium heat. 7.
Brush chicken with oil, season with salt/pepper/oregano and place in skillet. 8.
Cook for 2-3 minutes, without moving, flip and repeat. 9.
Continue to cook/flip chicken every 2-3 minutes until just cooked through, 12-15 minutes. (155 degrees) 10.
Remove chicken to a plate and leave over heat. 11.
Squeeze in one half of lime, add remaining one cup of stock, raise heat and bring to a boil. 12.
Lower heat to medium and swirl in butter, once melted add chicken back to pan and baste with sauce. 13.
Remove pan from heat and plate. 14.
Place a scoop of orzo on individual plates, top with chicken and spoon over sauce.
