Go Red With Rising: Healthy Eating Habits

CHARLOTTE, NC- February is Heart Health Month and Rising is Going Red with some healthy eating habits. 

Chef Jay Z of  “In Harvest” shows Kaitlin how to make Quinoa Fruit & Seed “Trail Mix”.

Ingredients

8 oz. InHarvest Quinoa (white, red or black), cook as per packaging

3/4 c. golden raisins or regular raisins (any dried fruit would work)

1⁄2 c. pumpkin seeds, lightly salted

1 banana, medium dice

2 c. fresh cantaloupe, medium dice

Directions

1. Cook the InHarvest Quinoa as per package directions. Chill when finished cooking.

2. As quinoa cooks, dice banana and cantaloupe.

3. Fold all together when quinoa is cooled.

4. Serve cold or heat up quinoa and add all ingredients like you would serve oatmeal.

Chef’s Note: Due to bananas, this recipe has to be made to order. Will hold for 1 day, then the bananas turn brown.
