Eat My Schwartz: Geoff Cooks Shrimp Carbonara
CHARLOTTE, N.C. – WCCB News Edge panelist Geoff Schwartz is a former NFL offensive lineman, host of The Block ‘Em Up podcast, an author and a cook! He showed us how easy it is to make shrimp carbonara.
Shrimp Carbonara Recipe
1 package fresh Linguine pasta
4 large eggs
2 strips of thick cut bacon. (Can also use pancetta.)
1 cup finely grated Parmesan cheese
2 cloves minced garlic
Freshly cracked black pepper
Bring salted water to a boil. Add the Linguine when the shrimp are close to being done. It will only take 2 minutes to cook the pasta. When the pasta is done, reserve 1/2 cup of the water, then drain.
While the water is boiling, heat a large skillet over medium heat. Add the bacon and sauté until the meat is about half way to being crispy. Add the garlic and shrimp into the pan.
In a small bowl, whisk the egg yolks only and the cheese, until well-combined.
When the pasta is finished and drained, add to the pan and mix. Add a tad of the reserved pasta water to de-glaze the pan. Continue to mix for another minute.
Remove the pan from the heat and add the egg mixture, stirring quickly until the eggs thicken. The residual heat will cook the eggs but work quickly to prevent the eggs from scrambling. If the sauce seems too thick, thin it out with a little bit more of the reserved pasta water.
Season liberally with freshly cracked black pepper. Add salt if needed.
