Wilson’s World: Celebrating National Pancake Day with Pancake Connoisseur‎ and Top Chef ‎Contestant, Chef Christopher Scott

CHARLOTTE, N.C. – National Pancake Day is this Saturday, September 26th and Wilson usually likes to spend the day at his favorite IHOP, but today he is doing something a little different.  Chef Christopher Scott, pancake connoisseur‎ and Top Chef ‎contestant, joined Wilson this morning to celebrate all things pancake. Chef Scott gave us some tips on the perfect pancake and prepared chocolate pancakes with chorizo and chipotle bourbon maple syrup.

Chef Scott’s Chocolate Pancakes with Chorizo and Chipotle Bourbon Maple Syrup

Ingredients for the pancakes:
1 1/3 cup All Purpose Flour
1/3 cup  Cocoa Powder
6T Sugar
1 ½t Baking Powder
3/4t Salt
1/4t Baking Soda
2 eggs
3T Melted Butter
¾ cup Buttermilk

1 Link Chorizo, Remove Casing

Ingredients for the syrup:
1 dried Chipotle Pepper
3 cups Bourbon
2 cups Maple Syrup
1 vanilla Bean, split
1 star anise
1t Kosher Salt

Take all of the ingredients for the pancake:
In a stainless bowl, add all of your dry ingredients and then add the wet ingredients, whisk until smooth and set aside.

For the chorizo:
Take the casing off of the chorizo link and slice thinly. I like to do it longways so it’ll curl when cooked.
Render slowly in a sauté pan and when caramelized set aside in the pan keep warm. (If you want to add some of the chorizo fat to the pancake batter, it’s safe to add a couple of tablespoons)

For the bourbon maple syrup:
Add all of the ingredients in a saucepan and bring to a slow simmer.
Cook for 10 minutes and set aside.
Serve warm if you like. Any remainder can be containerized for later use.

Method:

  • In a sauté pan/flattop/cast iron skillet, bring to a medium low heat. Add butter.
  • When bubbly and beginning to brown, put in a small ladle of pancake batter. When bubbles form, flip!
  • Cook the other side for 2 minutes more and move to a plate. Keep warm.
  • Repeat this process until you have stacks of chocolate pancakes.
  • Using a slotted spoon, spoon some of the curled chorizo on top of the pancakes and then the warm bourbon syrup.
  • Garnish with drizzled chocolate, or shaved chocolate if you wish. Serve immediately.
